Want to see a preview of a new afternoon tea service at Sanctuary T?
It should be launching soon! Sanctuary T serves an in-house line of loose leaf tea. We drank Darjeeling, Jasmine Silver Needle, and Spring Harvest (green and white tea blend with lilikoi).
They’re offering three “levels” of afternoon tea. This is the Jasmine Afternoon Tea, the largest of the three sets. Come hungry ^_^
Tea sandwiches (made with bread from Panya in the EV), left to right:
– Parmesan, truffle, and egg
– La quercia prosciutto and strawberry-basil mustard
– Tea-cured king salmon
Tea cakes, left to right:
– Lemon and lavender
– Rose and lychee
– Strawberry and polenta tart with rhubarb conserva tucked under the pastry cream.
In the middle, rosemary caramels and matcha ganache infused with osmanthus. The soft ganache is similar to nama/fresh cream chocolate…like the ones from ROYCE’.
Tea macarons (tea is infused directly into the egg whites making flavors more intense than the usual tea-infused macaron) tucked into the grass. The presentation is meant to evoke spring. From left to right:
– Rose with first flush darjeeling
– Jasmine with lungching
– Osmanthus white ganache with supreme tieguanyin
Scones and bomboloni come on a separate tier.
Bomboloni plump with vanilla bean cream and Nutella.
Cream scones, warm from the oven…
…and a trio of treats, all housemade (even the cream). Raspberry preserves, clotted cream and roasted strawberries.
East made an herbal blend for us to finish…so thoughtful ^_^
