Baccarat just introduced a new tea service to the portfolio. It’s called the Tsar Nicholas II.
First comes the amuse. Pickled sable, fingerling potatoes, baby beets, and kohlrabi.
Always yes to champagne…
…and a cup of long jing.
Instead of the traditional savories/scones/sweets, the focus is on caviar.
Petrossian’s Tsar Imperial Ossetra (30 grams with the service).
All the classic accoutrements (chives, egg yolks and whites, red onions, and crème fraîche)…
…toast points and blinis. The blinis are infused with Ruschka (a Mariage Frères blend) and have a reddish tint to them.
Intermezzo of Stoli Kvass and rooibos sorbet…
…topped with macerated golden raisins and puffed farro.
Followed by a pair of bonbons with Earl Grey caramel…
…and my personal favorite part, these lavender shortbreads. So flaky, so buttery.

P.S. Two new (and wonderful) drinks to look out for. One made from rose water and ginger. Pineapple, strawberry, and lemon.
